Rhubarb Ginger Jame

Rhubarb paired with crystalized ginger is oh so perfect. Tangy, spicy and just a touch sweet. I doubled this recipe and canned it. And despite making a double batch, I think I need to make another double batch of this as soon as I get more rhubarb.
